Having been born in South America, to living in the USA and Europe for many years, to now residing in British Columbia, Canada for 17 years, we have been able to travel and eat in many parts of the world. At a young age, most kids want hotdogs and chocolate as a treat.
My siblings and I had cravings for new flavours, spices, fruits, veggies! As our entire family has a strong passion for food, dinner time is when we get to catch up and bond over our love for flavourful meals. Growing up, we were always working part time in different restaurants learning for preparation, presentation, and management from the best of the best around the world. While living in Spain, I obtained a diploma on Culinary Arts and Baking; Pastry Arts.
We bring a variety of these techniques learnt from our travels, our parents, grandparents, and friends to our business. As someone who cooks in the kitchen often for his wife and kids, I know how to take ordinary items and make them taste extraordinary.
With over 23 years of experience in professional kitchens, Chef Clayton has lived and breathed culinary arts for for his entire career. Starting young in the kitchen next to his mom Clayton quickly realized his passion in life was food. Graduating in 2002 from Salmon Arm Senior Secondary with the top student award in Chef training, Clayton began his culinary journey around the continent.
He completed the Culinary Arts program at Vancouver Island University and was hired by the prestigious, luxury hotel brand Four Seasons where he spent 14 years. After opening the new hotel in Whistler in 2004 he has worked at many properties including, Seattle, Toronto, Houston Texas, Jackson Hole Wyoming and is now back in his home town of Salmon Arm. During his time with the Four Seasons, Clayton has catered by helicopter, boat, snow cat and even in an elevator and is excited to see where the industry takes him next. In 2011 at the age of 26, Clayton was the youngest chef to compete on the hit tv show Top Chef Canada, although brief, his experience helped to secure his drive to constantly learn and grow as a chef.
Now, together with his wife Lazara, Clayton is the co owner of Shuswap Food Services and has partnered with Gabe Nava Catering to offer the region excellence in the catering industry. Stay tuned for his next project Shuswap Street Food, a food truck offering restaurant quality on wheels, launching the summer of 2023.
